The problem with proving it was off is the speedo is not going to read lower than the speed limit. For example, I got a speeding ticket in my blazer a while back and it had 35" tires on it, well the speedo read 65 and I was really doing 55 but the speed limit was 45. I took my blazer over the Denver Speedometer and had it tested, got the paperwork to prove it and took it to court. The judge pretty much just laughed at me b/c he said if I didn't know the speedo was off (which I had claimed) then why was I going 65 in a 45? So that got thrown out. If you can, you need to prove the bike was reading a slower mile per hour versus what the actual speed was and then go have it tested to provide documentation. Once it's tested either make sure it's notarized just to be on the safe side. All the notarizing is going to do is make sure the date it accurate, if you don't know a notary you can go to any bank but also my GF is a notary for the state. As for insurance, almost every single insurance company I know of can back date insurance to the beginning of the month. If you can't find one, I know a guy that can go back as far as you want for $50.

THE MOST IMPORTANT THING YOU CAN DO IT JUMP ALL OVER THIS!!!!!! The longer you wait, the more you are digging yourself into a hole. Get a plan and get it done right away... b/c waiting around is going to only screw you more. If you bring valid documentation to the DA at least then you have a fighting chance. And after all of this, if you STILL don't get the answer you want hire that lawyer.

PS, from the sounds of it the bulk of this ticket is b/c of the speeding. If I remember correctly the standard speeding ticket is 10-15mph is 4 point and then for every 10mph more it's another 2 points... I think, but if that's right you could have easily been doing 25 mph over the speed limit. Either way, whether you were or were not your biggest issue here is the speeding. Derive a plan to get that speeding portion of the ticket handled and the rest should fall into place. Going 3 mph over the speed limit is hardly careless or reckless, but going 20-25 mph is careless/reckless and that is at the pigs discretion.
