This is the pass seat on my 97 daytona.I perfer the Seat cowel but if she has to ride
anyway its prob easy to fab something. Get some Webbing from an EMS or what ever climbing store you have around hole punch it, then burn the holes so the ends seal. then just bolt it in. you could prob make a rubber sleave for it if you wanted.

my 00 750 has one, but depending on what you want an sv 1000 might be a really good bike for the both of you, it's more of an upright position so she's happier, and you can still stand it up in 2nd on the highway.
I'd just make one if I were you, maybe use an old g-string of hers or something...

I would think the passenger is much more likely to lose their balance, or just pitch backwards under hard acceleration holding onto that.
Have her wrap her arms around you, hands on the tank, or holding your jacket.

My wife loves that strap for when we are crusing on the highway. I furred my seats and covered it up and i had to take that **** off the first time she rode on the back. I see her point. It's more comfy for her when she is sitting up straight. She hold onto the tank when we are ripping though and doing stoppies and wheelies. I haven't lost her yet.
