Cowboys is fun. Its very much a 'country' type of bar, so if you don't like that scene, Cowboys wouldn't be your place. Its HUGE though. Good drink specials, a big dance floor. Personally I love going out to City Walk and Wall Street is always fun, too. Depends on what atmosphere you are looking for.

City Walk is Universal Studios' nighttime club area. City Walk connects Universal Studios with Islands of Adventure (their two theme parks). There's a bunch of clubs/bars to go too. Its kind of touristy, but I always have a good time there.

Wall Street is in Downtown Orlando. Its a string of clubs, all located on Wall Street (hence the name!). Usually pay one cover ($5) and you get access to all the clubs in the area.
