I never see any in that exact size ?? 180/55/17 I think ??

yea i got down to pro-stock performence, over by cycle specialties they never have 180's usally all 190s and stupid sizes i use to use on my f3 like 160-170's

will a 190/55-17 fit my bike. i mean does the 55-50 make a diffrence?

Yep, and have a slightly taller profile and probably steer a little quicker too , You'll like it better most probably???
The second # 55 is the tire profile height % in relation to the width , The first # 190 (the width)
If I'm wrong someone correct me
