Moose meat is pretty good. I had some fresh venison last week and it didn't taste nearly as good as I remembered. Maybe you have to season it. I've never cooked venison before.

When you get a permit it is only for a certain zone and a certain week (I think only 2 weeks total). It's a lottery to get a permit. Other than that, I don't know of any restrictions.

 

a lot of the flavor depends on what the animal has been eating ... i prefer venison that eats grass as opposed to a lot of the deer around here that eat corn
