Honestly, I'm not sure of the "fastest" way to transition.... But I feel that the safest way to practice is with a sit down, preferrably at idle or close..... That way if you under brake, slow down, stall, and mousetrap, you won't flip over the handlebars......
Outside of me personally, I've seen people learn with foot in bars.... and others with idling ss's......... the hand brake is pretty simple to use..... just remember in the beginning that losing bp and having to start over is less costly and painful that mousetrapping........

im not sure what the question is? if your using the handbrake, i would assume that you are doing off peg stuff! if your foot is on the peg, then why would you not use the foot brake?

Don't worry about idle your first day, just work on holding slow wheelies at like 20mph, and keep working on slowing them down tell your idling
